Rice Krispies Cake

My kiddos love rice krispies… okay… I love rice krispies too… and I really wanted to try my hand at a rice krispies cake. So with Memorial Day celebrations and Fourth of July picnics just around the corner I decided to make a patriotic themed rice krispies cake. I know… YUM!

When I was first dreaming up this idea I thought about tinting the marshmallow creme. Oh, yep. That white gooey goodness dripping off that cake is marshmallow creme! But I decided to keep it simple and embellish the cake stand instead.

Let’s start with this super simple cake. Here’s what you’ll need:

  • Rice Krispies
  • Marshmallows
  • Butter (my little one has food allergies so we use Smart Balance Light instead)
  • Marshmallow creme
  • Circle spring form pan, mine is 8″ (found at any baking or craft supply store)
  • Wax paper
  • Ruler

And here are the easy steps for the cake:

  1. Butter the inside of a spring form pan and set on wax paper.
  2. Determine how thick you want each layer. Mine is 1.5″
  3. Make a batch of rice krispies treats, like you normally would according to the box directions.
  4. While still warm, press the rice krispies treats into the pan with buttered hands (keeps you from getting burned by sticky marshmallows)
  5. Allow the layer to set for 3-4 minutes, remove spring
  6. Press down any stray rice krispies into place
  7. Repeat

TIP: I used the extra rice krispies from each batch to make immediate treats for the boys so they would leave my cake alone. {grin}

Now for the icing, and it doesn’t get any easier than this:

  1. Spread a dollop and a half of marshmallow creme (right out of the jar) on top of each middle layer. For the top layer, be a bit more generous and bring the creme to the side of the cake with a knife. Gravity will do the rest!

TIP: Don’t worry about any lumps when you start spreading the creme, it settles and smooths out beautifully.

Memorial Day Celebration

Now that you have a lovely cake, let’s embellish that cake stand! You’ll just need red crepe paper and hot glue. Place a dot of hot glue on your cake plate edge, attach your crepe paper. Bend your crepe, another dab of hot glue. Just continue all the way around.

Fourth of July Celebration

I’m sure many of you are thinking, “I don’t want to ruin my cake plate!” I absolutely suggest that you test a small corner, but I can tell you that I’ve been hot gluing thing to my ceramic cake plates for years and I’ve never damaged one. I’ve dropped them on the floor and watched them shatter {in horror}, but I’ve never lost one to hot glue. Once it dries it pops right off and leaves nothing behind.
